Here is a different idea for using that summer squash that’s pretty healthy as well.
- 1 zucchini or yellow summer squash
- 1 medium tomato, diced
- 1/4 cup sweet onion, finely chopped
- 1/4 cup low fat mozzarella cheese, shredded
- 1 teaspoon fresh basil, finely chopped
- Your favorite lowfat salad dressing (such as oil and vinegar, honey mustard or even ranch)
Wash your squash thoroughly. With a potato peeler, scrape thin long slivers off the squash. Stop making slivers when you reach the squash’s seeds. Save that section of the squash to use later in a stir fry dish or squash and onion dish.
In a bowl, mix the lengths of squash, tomato, onion, cheese and basil and a small amount of your favorite dressing. Toss lightly and serve.
This easy summer dish gives you another way to eat healthy without eating the same old style salad.
