The classic head lettuce, Iceberg is a premier lettuce in many gardens, especially in regions where long cool seasons encourage solid heads.

This is the standard crisp-head variety with large solid hearts and very crisp, tasty leaves. In warmer parts of the country, it may not form the tight heads that it does in milder California (where most head lettuce is commercially grown), but the looser heads that do form are delicious and distinctly Iceberg nonetheless. If you live in an area where the temperature gets hot fast in the spring, harvest the heads early and enjoy. Rich in vitamin A. Set transplants 12 inches apart in rows 12 to 18 inches apart. Nutritional Information Like all lettuces, iceberg is very low in calories and composed of over 90% water and as such is a good ingredient in a calorie-cutting diet. The darker leaf lettuces and romaine pack a heavier load of nutrients than the lighter colored head lettuces, but iceberg can still claim to have a fair amount of folate—a B vitamin that helps fight heart diseases and strokes—and vitamin K, important not just in blood coagulation but in bone health, especially helpful in lowering the incidence of hip fractures. So if you love that crunch of iceberg, go ahead and enjoy it.
